Every 5000 oil n filter ?

Nissan workshop manual says every 12 months or 15,000 km (9,375 miles) - obviously depends on oil and filter quality and where driven, eg city stop/start. Not worth skimping on.

In one of the service manuals, it says to halve that figure if you do mainly short trips 👍

Ok

Perhaps I should ask a better question

I have had my Elgrand for 3 years

I check the oil regularly

I have noticed that she is starting to need a top up of oil
Not much, but enough to keep an eye on it

Is this normal for this engine?

Yes some do some don’t I changed mine every 3000 miles.

Is that to prevent potential leaks on a higher mileage engine?
Hoping that the higher viscosity will help at operating temperature. Oil seems very watery at present and wondering if this is contributing to top end rattle/tick when cold

I'm not an expert by any means, but I was under the assumption thicker oil wasn't good in a vq35 series engine as they actually spray a certain amount of oil behind the pistons for internal lubrication, which is why they can drink oil. Thicker oil will block the squirter jets.

Mine has 10w-40 semi in it, as that's what they put in it prior to sale. Seems fine and I'll probably only chalk up 3-3.5K miles by service time.
I'm going 'back' to fully synthetic 5w-30 when I get it serviced next. I say 'back', as on the service history it came with, that's what was used, even down to that 'strong save' stuff you see in the manual.

If your van has had cheap oil or no oil changes in its long life before you, then it makes no difference if you use the best or the cheapest oil.

The damage/wear has already occurred - no amount of top quality oil can replace the wear.

I believe the vans that have been noted as having very little oil use have had good maintenance by its previous owners from new, the ones that burn a lot have not.
